ApiInspectorInterceptor class

Dio interceptor that records requests/responses/errors into an ApiInspectorService.

Automatically acts as a transparent pass-through in release mode so it adds zero overhead to production builds. Pair this with ApiInspectorOverlay + ApiInspectorController to get a tap-driven capture UI.
